Four portobello mushrooms, diced
1 Tbsp toasted sesame oil
1 Tbsp gluten-free tamari
Four giant eggs
2 bundles (6 half oz) soba noodles (buckwheat noodles)
2 cups steamed greens (broccoli, broccoli rabe, kale, and so forth.) or packed uncooked spinach
Black sesame seeds (optionally available)
Minced contemporary pink Thai chili (optionally available)
Four cups (1 cup per serving) just-boiled water from the kettle, for serving
